Slow Cooker Braised Beef Bits

Slow Cooker Braised Beef Bits

I love my slow cooker! When I was single and working full-time, I could put together a meal and let it cook all day as I worked. As soon as I got home, I would smell a wonderful dish ready to eat. What could beat that? I may be a full-time stay-at-home-mom now, but I still rely on my crock pot. In the summer, it is the perfect way to cook a dish without heating the house by using the oven. Am I the only one who avoids using the oven in the summer? When I saw this recipe for

Homemade Spaghetti Sauce

I’ve got to be honest. When it comes to spaghetti, I cheat. I cheat every single time I make it. I throw the noodles in the water, brown some meat, and then add jarred spaghetti sauce. If I’m in the mood, I might even add a few spices, including a pinch of cayenne to give it some kick. It takes me only 15 minutes to make, tops. Quick and easy. The problem with jarred sauce, though, is it doesn’t taste very satisfying. However, I’ve never been one to try making homemade sauce. Maybe it is because my dad did that

Chicken Caprese Sandwich

With our garden busting at the seams, we have an abundance of delicious, sweet tomatoes. But what do you do with dozens of tomatoes? Beyond making tomatoes sauces, salsa, and bruschetta, I make lots of sandwiches. There is nothing quite like eating a sandwich with fresh tomato. Ahhh! Our bounty of tomatoes helped inspire this next dish, my Chicken Caprese Sandwich! I love Caprese salads. They delight my senses. So, one day it hit me that I should turn it into a sandwich. This sandwich turned out better than I could have expected (and it would be great even without

Italian Quiche

When I was a little girl, in the 1970s, I remember hearing the phrase, “real men don’t eat quiche.” I found this phrase a bit confusing because I had no clue what quiche was. I’m quite sure my dad never bought into the real men tagline with the phrase, after all, he liked watching musicals and romantic movies with my mom. However, I didn’t eat quiche until I left home since my parents never made it.  It was when I was a graduate student living in southern Georgia that I started to experiment with cooking. During that time in my

Cheesy Hamburger Casserole

Cheesy Hamburger Casserole

Everyone has that one or two recipes that are go-to recipes in your home. You know, the recipe that you know all will love, and likely was a recipe your parents made at one time for you. We have a handful like that in our home. This recipe for Cheesy Hamburger Casserole is one of our favorite go-to recipes.  Recipes that you can count on for your family are important when you’re a parent. There are nights when I just don’t feel like fighting with my kids over what they will or will not eat. While pizza is always a

Easy Chicken Tacos

Since we love Mexican food so much in our home, my husband and I are constantly on the lookout for new ways to make our favorites, like tacos. Tacos are a definite classic! The neat thing is that there are so many ways to make them. (And we are slowly convincing our picky daughter Ginny that they are worth eating, too.) This recipe for Chicken Ranch Tacos looked too tempting and easy to pass up. I love chicken tacos! I started off with 3 cups of cooked chicken. I had 2 cups ready to go from my freezer that I

Chicken Gloria

I love chicken! I’m always on the search for a tasty new chicken dish. In fact, most of the food that I pin on Pinterest tends to be chicken. Luckily, I married a man who also enjoys chicken. Our toddler daughters are not as clear on the chicken love, though. My oldest tends to avoid most meats, in general. My youngest can’t get enough meat and adores chicken, most of the time. When I stumbled on this recipe for Chicken Gloria on Pinterest, I had to pin it immediately! It looked amazing! Not only did it have chicken, but mushrooms

Baked Ravioli

I’ve probably said it before, but I will say it again. My girls absolutely love pasta! Any type of pasta and practically any type of sauce. It makes feeding them, most days, quite easy. We usually make pasta or even rice, another favorite, as a side dish since it guarantees they will eat something for dinner. Lucky for us, we adore pasta too. Win, win!  When I saw this recipe for Baked Ravioli, I knew it would be a huge hit and it was! It is simple to make and the flavor of the sauce is amazing. As my oven preheated to

Simon & Garfunkel Roast Chicken

I have a confession to make. Please don’t judge. I love chicken, but I do not like dark meat and neither does my husband. Awful, right? When we buy chicken, we don’t save on buying thighs because we almost always buy chicken breast.  However, I do love a roast chicken and just roasting the breasts isn’t the same. And now that our girls are older, we can give them all the dark meat. That’s fair, right? I also will cut up any remaining meat from the roast chicken to use in recipes that call for cooked chicken. Win, win for

Grilled Chicken and Bacon Sandwich

Not long ago, I bought a book to help me find creative inspiration in cooking. The book, The Flavor Bible, lists ingredients and the flavors that go best with them. I find it a great way to stir up ideas in creating a new dish to try at home. Normally, I don’t work outside of a recipe, but with my new tool (that’s what I refer to the book as), I find myself being much more daring and adventurous by creating my own recipes. It was by using my newest tool that I came up with this grilled chicken and
