This past week I was on a Mexican kick. I made a couple of Mexican dishes, including this one for oven-baked chimichangas. I love chimichangas! It is my fall back order at any Mexican restaurant. If I can’t make up my mind, I order the chimis. It also serves as my litmus test for a new Mexican restaurant. I judge a location by their chimis. If I like the chimichanga, I will go back. Baked Crunchy Taco Casserole

One of my go to things to cook at home is tacos! They are easy to make, and difficult to screw up. I make them often enough that I stopped buying the packets of seasoning. Carnita Dreams

Yummy Carnitas My husband and I love Mexican food. And, by love, I mean LOVE!  Luckily, our small town has a fabulous Mexican restaurant, Cancun. The food there is so good! Shredded Beef Tacos: Crock Pot Delight

I love Mexican food. Anytime I see a recipe for Mexican food, I am likely to pin it, especially if it looks easy.   Yesterday, I decided to try a brand new pin (I usually go with older pins first), slow cooker shredded beef tacos. My type of recipe, Mexican and slow cooker.
