Slow Cooker Taco Dip

I first discovered Ro*Tel® nacho dip as a teenager. I fell in love! Ever since then, I’ve had a love affair with queso dips. My favorites are at Mexican restaurants, but I’m not limited to those. If it has cheese, I’m usually happy. Of course, I find it easiest to make the Ro*Tel® dip so I make it often. I’m always on the lookout for a good variation or something new.  The other night, when the bracket was announced for the NCAA tournament, my husband and I decided to make appetizers for dinner. He made some tasty  bacon-wrapped meatballs and pizza

Slow Cooker Pot Roast

Every time fall comes, I crave comfort foods. I make lots of chili, bake pies, and cook up casseroles! Since summer is over, I feel free to use my oven more. One of my favorite comfort foods is pot roast. I remember as a little girl my mom making roast. The meat would sit in the oven for hours, surrounded by potatoes and carrots. She would use the drippings left from the meat to make a tasty gravy to go along with the roast. Yum! When I was single, I learned that I could use a slow cooker to make

Mexican Stuffed Shells

I’m sure you’ve heard the phrase, “a way to a man’s heart is through his stomach.” Well, a way to this woman’s heart is through my stomach. I’ve always been impressed by a man who can cook (and enjoys it). In fact, I find men who like to cook sexy. It means I won’t always be responsible for making dinner.  My husband and I had an unusual courtship, with most of it being long-distance. By the time we had our first “official” date, I knew I loved him. We met at Forest Park in St. Louis and had a picnic

Slow Cooker Braised Beef Bits

I love my slow cooker! When I was single and working full-time, I could put together a meal and let it cook all day as I worked. As soon as I got home, I would smell a wonderful dish ready to eat. What could beat that? I may be a full-time stay-at-home-mom now, but I still rely on my crock pot. In the summer, it is the perfect way to cook a dish without heating the house by using the oven. Am I the only one who avoids using the oven in the summer? When I saw this recipe for

Cheesy Hamburger Casserole

Cheesy Hamburger Casserole

Everyone has that one or two recipes that are go-to recipes in your home. You know, the recipe that you know all will love, and likely was a recipe your parents made at one time for you. We have a handful like that in our home. This recipe for Cheesy Hamburger Casserole is one of our favorite go-to recipes.  Recipes that you can count on for your family are important when you’re a parent. There are nights when I just don’t feel like fighting with my kids over what they will or will not eat. While pizza is always a

Enchilada Casserole

My love for Mexican food knows no bounds! I can’t get enough of it. I probably would be quite happy eating it for every meal, but that isn’t realistic. While my husband loves Mexican food, too, he likes more variety in meal planning. How unfortunate! When I saw this recipe for Easy Enchilada Casserole on Pinterest, I knew I had to try it. It was easy to make (hence the name) and looked tasty. Perfect! I preheated my oven to 350°, then set about browning my ground beef which I seasoned lightly with salt and pepper. While the meat was

I love to cook but I don’t do many recipes on my blog, so I’m excited to share a great recipe for you today. Let’s talk crock pots: I love them! I own three of them. It kind of happened by accident. I had an old 6 quart one and a 1 quart one for the longest time. Then when

New Family Favorite: Beefy Sour Cream Noodle Casserole

To me, there is nothing quite like a casserole! I especially loved them as a singleton because it meant I had a meal every night for a week. It doesn’t work like that now with my family, but a good casserole is always a treat. So, when I saw this recipe for Beefy Sour Cream Noodle Casserole, I had to pin it for later.  It wasn’t until later that I realized that I had already pinned it, sort of. You see, this is a variation on a Ree Drummond (The Pioneer Woman) recipe for Sour Cream Noodle Bake, I guess I’ll

Shredded Beef Tacos: Crock Pot Delight

I love Mexican food. Anytime I see a recipe for Mexican food, I am likely to pin it, especially if it looks easy.   Yesterday, I decided to try a brand new pin (I usually go with older pins first), slow cooker shredded beef tacos. My type of recipe, Mexican and slow cooker. It ended up tasting good, but there are a few things I will tweak in the future.   The first thing you need to do is create a rub out of 2 tsp. chili powder, 1 tsp cumin, and 1/2 tsp smoked paprika. I subbed regular paprika
