Chipotle Chicken Quesadillas

I’ve made no secret of the fact that Mexican is, by far, my favorite cuisine. I love everything about it, from the spices to the variety of dishes and sauces. Honestly, I could happily eat Mexican food every day and not be bored.  One dish I made (often) when I was single was quesadillas. Tortillas, cheese, and other fillers I craved. Basic goodness. It was quick and easy to make without having leftovers, unless I wanted them.  Luckily, I married a man who loves Mexican almost as much as me, and have raised two girls who love cheese quesadillas (as well

Creamy Lemon Chicken with Pasta

It’s been a while since I shared a recipe on my blog. I didn’t suddenly stop cooking. No, it was much simpler than that. I went back to some basic cooking. With a move plus three little ones, I couldn’t imagine being adventurous with recipes or creating something new, much less taking the time to photograph and share what I cooked.  In the last couple of weeks, though, my desire to play with flavors has slowly inched back. It started simply enough when I made my schnitzel (recipe coming soon…I promise). I felt satisfied that I finally mastered the recipe.

Chicken with Lemony Green Beans and Potatoes

Before I met my husband, I secretly hoped that I would find a man who loved to eat the dark meat on chicken. I don’t like dark meat. It’s only white meat for me, so I figured having a man who liked dark meat would be perfect. We could eat a whole chicken with no issue.  However, I had no luck in that. I met Chris and fell in love with him before I asked that all important question, “What’s your favorite? White or dark meat?” He let me know he loved white meat and couldn’t stand dark meat. And,

Easy Chicken Tacos

Since we love Mexican food so much in our home, my husband and I are constantly on the lookout for new ways to make our favorites, like tacos. Tacos are a definite classic! The neat thing is that there are so many ways to make them. (And we are slowly convincing our picky daughter Ginny that they are worth eating, too.) This recipe for Chicken Ranch Tacos looked too tempting and easy to pass up. I love chicken tacos! I started off with 3 cups of cooked chicken. I had 2 cups ready to go from my freezer that I

Chicken Gloria

I love chicken! I’m always on the search for a tasty new chicken dish. In fact, most of the food that I pin on Pinterest tends to be chicken. Luckily, I married a man who also enjoys chicken. Our toddler daughters are not as clear on the chicken love, though. My oldest tends to avoid most meats, in general. My youngest can’t get enough meat and adores chicken, most of the time. When I stumbled on this recipe for Chicken Gloria on Pinterest, I had to pin it immediately! It looked amazing! Not only did it have chicken, but mushrooms

Chorizo Chicken Bake

Every once in a while, I come across a recipe that amazes me. It makes me wonder how a person came up with the idea. Sometimes, I’m even brave enough to try the dish or make it myself.  Not long ago, I came across a recipe on Pinterest for Chorizo Chicken Bake. It looked amazing. I was most astounded that someone would think to put a different meat on chicken and serve it that way. I never would consider browning sausage just to bake it over chicken. It would never occur to me. I’m so grateful that it Carole at

Peppered Chicken with Caramelized Onions

I’m not a fan of most vegetables. Once upon a time I tried to become a vegetarian. You can guess how well that went. I did try for nearly two years and had almost given up all meats, save chicken. I ate soy burgers and played around a bit with tofu. Later I would learn I was allergic to soy. (No wonder I had issues for two years.) My problem with vegetables has little to do with the actual flavor and more to do with the texture (with a couple of exceptions, like asparagus…bleh). Because of that, I still cook

Slow Cooker Chicken Tacos

Since Mexican food is one of my favorite cuisines, it shouldn’t be a surprise that I pin a lot of taco recipes on Pinterest. I’ve pinned beef taco recipes, pork, and chicken. In my mind, there is no such thing as a bad taco. Well, at least I haven’t met a taco I haven’t liked, yet. I also love using my slow cooker. My slow cooker and I have been “friends” for years. Personally, I prefer to use the slow cooker when making meat for Mexican dishes. The meat always turns out moist, flavorful, and, most importantly, delicious. This recipe I

Hot Bacon & Chicken Salad

Every once in a while, I discover a fabulous salad. I will order it over and over at the restaurant or make it repeatedly. One salad that comes to mind is the salad at the Pasta House restaurant. While I was pregnant with my oldest, I craved that salad. There were many days when I looked at my husband and said, “I need that salad.” He knew what I meant and took me there multiple times over the course of those 9 months. One of my all-time favorite salads, though, is this recipe for Hot Bacon & Chicken Salad that

Roasted Tomatillo & Lime Chicken with Sauteed Corn, Bacon, and Scallions

A couple of weeks ago, when I was busy meal planning, I decided that I needed to be much more deliberate about what I chose to cook for my family. Specifically, I need to include a vegetable and/or a side dish with each meal. I admit that I’m awful about doing this. When I was single, I was lucky if I cooked at all. When I did cook, I often made a casserole that would last me the entire week. Cooking for just one person can be a challenge.  Now, I have a lovely family of four. Granted, only two
