Enchilada Casserole

My love for Mexican food knows no bounds! I can’t get enough of it. I probably would be quite happy eating it for every meal, but that isn’t realistic. While my husband loves Mexican food, too, he likes more variety in meal planning. How unfortunate! When I saw this recipe for Easy Enchilada Casserole on Pinterest, I knew I had to try it. It was easy to make (hence the name) and looked tasty. Perfect! I preheated my oven to 350°, then set about browning my ground beef which I seasoned lightly with salt and pepper. While the meat was

Chile Colorado Burritos

The burrito is one of my favorite foods. Recently, I discovered that my younger sister (in her late 30s, I might add) had never eaten a burrito. How is that possible? How can you go your whole life without that glorious food? I love burritos enough that I always on the lookout for new recipes to making them. I found this recipe for Chile Colorado Burritos on Pinterest ages ago. We have tried it in my home, now, three times. We love it that much! Not only is this recipe easy to make, it has amazing flavor. What makes this recipe

Oven Baked Chimichangas

This past week I was on a Mexican kick. I made a couple of Mexican dishes, including this one for oven-baked chimichangas. I love chimichangas! It is my fall back order at any Mexican restaurant. If I can’t make up my mind, I order the chimis. It also serves as my litmus test for a new Mexican restaurant. I judge a location by their chimis. If I like the chimichanga, I will go back. If not, then I won’t go back. So, when I ran across a recipe for chimichangas on Pinterest, I pinned it immediately. I’m glad I did. This recipe

Chicken with Poblano Chiles and Sour Cream

My husband and I love Mexican food so much that we have bought a cookbook dedicated to Mexican food. I tend to forget about the cookbook, 1,000 Mexican Recipes by Marge Poore, because I use Pinterest to do most of my meal planning anymore. However, on occasion, I open it up to see what I want to make. I have to admit to being slightly intimidated by the recipes in the cookbook. A few recipes seem complicated to me and a bit overwhelming. Others look time intensive, while some leave me unsure if my husband would like it (much less me). So,

Carnita Dreams

Yummy Carnitas My husband and I love Mexican food. And, by love, I mean LOVE!  Luckily, our small town has a fabulous Mexican restaurant, Cancun. The food there is so good! I can only think of one think I wouldn’t order there again. Everything else is so delicious! Our (DH and my) favorite thing on the menu is their carnitas. They are beyond yummy! The flavor of the pork makes me feel as if I am in heaven, even for the briefest of moments. Ever since eating the carnitas there for the first time, I have been desperate to find a

Shredded Beef Tacos: Crock Pot Delight

I love Mexican food. Anytime I see a recipe for Mexican food, I am likely to pin it, especially if it looks easy.   Yesterday, I decided to try a brand new pin (I usually go with older pins first), slow cooker shredded beef tacos. My type of recipe, Mexican and slow cooker. It ended up tasting good, but there are a few things I will tweak in the future.   The first thing you need to do is create a rub out of 2 tsp. chili powder, 1 tsp cumin, and 1/2 tsp smoked paprika. I subbed regular paprika
