Loaded Potato & Buffalo Chicken Casserole

I must be completely honest. I have tried this recipe for Loaded Potato & Buffalo Chicken Casserole once before. I LOVED it as did my husband! My parents were visiting at the time and they seemed to like it too. When I asked my mom if she wanted the recipe, she said, “No.” I was a bit surprised because I thought she liked it. She told me she did, but it was too much work. I didn’t think this was too much work, but I’m not a retiree either. I do have a board on Pinterest that I call Tried

Baked Caprese Pasta

I’ve mentioned this before, but it needs to be said again. I love pasta! Heck, my family loves pasta, especially my toddler. Whenever I hear about people going on any form of carb-free diets, I gasp in horror. How in the world can they give up pasta? So wrong, so wrong. When I see a pasta recipe that looks delicious, I can’t help but Pin it onto my pasta board on Pinterest. I found this recipe for Baked Caprese Pasta by Heather Likes Food when I was making another one of her recipes that I found on Pinterest.   (You might want to swing by

Fire Chicken and Cheesy Potato Gratin

During the summer, my husband loves to grill. I guess that is typical of most men. I, on the other hand, do not go near the grill. It freaks me out. I have this weird phobia with fire. It is so bad that I can’t even light a match, much less a normal size lighter. (I can light one of the extended ones though.) Therefore, when I see a recipe that will involve grilling, I know it will require me to recruit my husband’s help. Luckily, Chris is usually up for the challenge. The other night I recruited my DH

Mouthgasm!

The mouthgasmic dish (see my lovely hand model? Thanks, hone!) Fewer things make me happier than strawberries! They are my absolute favorite food! Usually, I pass up any recipes that involve strawberries. I generally love strawberries, the best, in one of the following forms: fresh, cut up & sugared, and in or on ice cream. There is no need to bake it in a pie or any such thing. (Although, I’m starting to consider doing just that some day soon.) A couple of months ago on Pinterest, I saw a recipe with strawberries that looked interesting so I pinned it.

Baked Crunchy Taco Casserole

One of my go to things to cook at home is tacos! They are easy to make, and difficult to screw up. I make them often enough that I stopped buying the packets of seasoning. Instead, I buy the jar of seasoning. It is more cost-effective after all. I do try to vary how I make tacos. Tonight at dinner, I tried one recipe that I spotted on Pinterest last week for Baked Crunchy Taco Casserole. (This taco dish comes from the food blog, Heather Likes Food, FYI.) Part of what attracted me to this dish, beyond the fact that it looked

My Husband’s Gift

Ginny helping stir This year was the third year we celebrated Father’s Day in our home. It is a new tradition I have yet to master. I keep wanting to celebrate in a way that my husband knows that he is appreciated. ¬†Eventually I will get it right. My biggest challenge each year is in choosing a gift for my DH. Since it is Father’s Day, I feel the gift should be coming from our daughters more so than me. I searched for inspiration on Pinterest, on store web pages, and lists of gift giving ideas. Nothing really struck me

Carnita Dreams

Yummy Carnitas My husband and I love Mexican food. And, by love, I mean LOVE!  Luckily, our small town has a fabulous Mexican restaurant, Cancun. The food there is so good! I can only think of one think I wouldn’t order there again. Everything else is so delicious! Our (DH and my) favorite thing on the menu is their carnitas. They are beyond yummy! The flavor of the pork makes me feel as if I am in heaven, even for the briefest of moments. Ever since eating the carnitas there for the first time, I have been desperate to find a

Chicken Enchilada Casserole

Ginny enjoying her pasta! My toddler, Ginny, loves pasta! It is one food we can almost guarantee she will eat, no matter how it is prepared.  Needless to say, we eat a lot of pasta at my house. Luckily, one of my DH’s and my favorite foods is Italian. So, this means that her preference for pasta works for us. Our other favorite is Mexican. Ginny has already learned to love quesadillas, enchiladas, and Mexican rice. So, yay, us!   When I ran across the following recipe on Pinterest, I was thrilled. It is a combination of Mexican and pasta,

Country Club Chicken: A Little Bite of Heaven

The finished product, ready to serve! One recipe I found on Pinterest has become a quick favorite in our home, Country Club Chicken. The first time I made it was when my parents were visiting. They fell in love with it. They asked me to email the recipe to them, and reminded me when they were on the road home back to Florida. Last night, I made it for a second time. Making it was more of a challenge this time around. After all, last time I had 3 additional adults to help keep my children distracted as I made

Finger Painting

When I was a kid, I loved painting and drawing. Finger painting, though, was the best. Getting my fingers all goopy with paint and making a masterpiece was so much fun. A couple of months ago, I tried to see how Ginny would respond to finger painting. She didn’t understand it in the least. It just didn’t go well. I figured that developmentally she just wasn’t ready. Today, in the hopes that Ginny would be able to finally enjoy it, we tried finger painting again.  This time, she seemed to enjoy it. She still doesn’t “get it” but she did have
